Thai Basil Tofu Parcels

BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.

Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.

Ingredients

300 gms/11 oz tofu, crumbled / grated
1 cup basil leaves, de-stemmed and roughly chopped by hand
1 tsp soy sauce
1/2 tsp sugar (adjust based on taste)
1 tbsp sweet chilli sauce
1/2 tsp chilli garlic sauce
1 cup finely chopped onions
1/2 cup finely chopped Bellafina peppers
1 clove finely chopped garlic
Salt and pepper to taste
1 lettuce
1/2 cup chopped peanuts

Method

1. In a pan, start to heat some oil for cooking on high flame

2. Add the onions and garlic and saute for five minutes till the onions begin to become brown

3. Add the Bellafina peppers and cook for another 5 minutes

4. Add the sauces, salt and pepper. Add some sugar if needed

5. Finally, add the basil leaves and cook for another 2-3 minutes. Add 1 tbsp of water and then add the grated tofu

6. Cook for about 10 minutes on low flame and adjust sugar and salt as needed

7. Take a crisp lettuce and make small bowls of leaves. Add 2 tsp tofu mixture in the lettuce and top with some chopped peanuts.
