Tamarind Sweet Potato Bisque

Ingredients:
3-1/4 cups peeled sweet potato, cut into 1″ cubes
3 cups vegetable broth
1 cup water
1/2 cup chopped onion
1/2 cup orange juice
2 Tbsp. plum vinegar
2 Tbsp. low-sodium soy sauce
1-1/2 tsp. minced peeled fresh ginger
1-1/2 tsp. dark sesame oil
1 tsp. tamarind paste
1/4 tsp. black pepper
1 fresh lemongrass stalk, halved lengthwise
fresh lime segments
chopped cilantro for garnish
sour cream for garnish
Instructions:
Place all the ingredients in an electric slow cooker. Cover and cook on high for 5 hours. Discard the lemongrass.
Place half of the potato mixture in a blender and process until it is smooth. Pour the pureed potato mixture into a large bowl. Repeat the procedure with the remaining potato mixture.
Ladle the soup into individual bowls and serve topped with a dollop of sour cream and some chopped cilantro. Garnish with fresh limes.
Yields 5 servings.
