Sweet Caramelized Fajita Peppers
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.
This is a great side but also perfect for vegetarian fajitas!
Ingredients:
*3 red Bellafina peppers cut into strips
*3 yellow Bellafina peppers cut into strips
* 1 green bell pepper cut into strips
* 3 onions cut into strips
* 2 tablespoons of cooking oil
* salt to taste
Directions:
In a large wok add all the ingredients and bring to a medium heat with a lid on. Lift the lid from time to time to stir fry over a medium heat. When the vegetables are soft and onions are no longer translucent, then take the lid off and continue to stir fry until they turn brow and start to caramelize. Adjust seasoning and serve at once.
