Stuffed Cubanelle Peppers
Also known as Italian Frying peppers. Cubanelle peppers are large and blocky. They are light green in appearance and they mature red. The thin walls of this pepper make it an excellent choice for frying. This pepper is not hot.
5 large cubanelle peppers
2 oz. shredded taco cheese
4 oz. taco meat precooked and seasoned (beef or chicken)
Cut the stems out of the peppers to hollow them out. Mix the meat and cheese together, and stuff the peppers as full as you can without breaking them. Put the tops back on and secure with toothpicks.
Heat your grill to about 375F. On the top rack lay a piece of foil large enough for all of the peppers. Cook until the skins start to turn brown. These peppers can also be served as appetizers.
