Spinach and Cheese Stuffed BellaFina Peppers
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina™ peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
8 BellaFina peppers, multicolored
1/2 c ricotta cheese
1/2 c grated cheese(cheddar, mozzarella, etc.)
1/2 c finely chopped fresh spinach
1/4 c grated parmesan cheese
salt and pepper, to taste
Cut off stem ends of peppers, cut in half length-wise and de-seed. Mix together cheeses, spinach and salt/pepper. Spoon the cheese mixture evenly into the pepper halves. Bake in 375 oven for about 20 min. until bubbly.
