Spicy Sausage Sauce
At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.
When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.
Ingredients
300 g/11 oz dried tortiglioni
2 tbsp olive oil
1 finely chopped onion
1 finely chopped celery stick
2 crushed garlic cloves
1 fresh red chili, deseeded
1 large can of peeled and chopped tomatoes, drained
2 tbsp tomato puree
2/3 cup red wine
1 tsp sugar
175 g/6 oz spicy salami
2 tbsp chopped parlsey
freshly grated Parmesan
Instructions
Heat 2 tbsp of olive oil in a large pot and add onion, celery, garlic and chili. I just used half of a Thai chili I had but next time I would use more. Cook gently, stirring frequently until softened, about 10 minutes.
Add tomatoes, tomato paste, wine, sugar and season to taste.
Bring to a boil, the lower heat and simmer gently, stirring occasionally for about 20 minutes. I then removed my chili.
If it gets too thick, add some water. While this is cooking away, cook your pasta and when ready, add your chopped salami.
Heat through and season to taste.
Drain your pasta and top with some of the sauce.
Then add more sauce! And some chopped flat leaf parsley and freshly grated Parmesan.
