Spicy Peanut Chaat
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Yield: 2-3 servings
Ingredients
1 cup raw shelled peanuts
½ of a medium onion, finely chopped
1 tomato, finely chopped
1 green chile, finely chopped
a handful of fresh coriander leaves, finely chopped
a few mint leaves, finely chopped
Salt to taste
a pinch of red chili powder
½ teaspoon roasted cumin powder
½ teaspoon chaat masala, optional but preferred
Juice from 1 lime
Instructions
Boil the peanuts in water (approx 2-3 cups) until they are soft yet crunchy (but not mushy). I used a pressure cooker to do this and gave it about 3 whistles.
Once the peanuts are ready, drain the water and put the peanuts in a bowl.
Add all the other ingredients in the bowl and toss it well.
Garnish with fresh coriander and mint leaves and you are ready to eat!
