Spicy Chardonnay Shrimp with Mango and Jalapeno

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Ingredients

½ cup olive oil
¼ cup Cambria Katherine’s Vineyard Chardonnay
1 tbsp fresh squeezed lemon juice
2 tbsp cajun seasoning
¼ tsp. red pepper flakes
pinch cayenne pepper
1 mango
1 raw jalapeño

Instructions

Combine first 6 ingredients in a baking dish.
Add shrimp and refrigerate for 30 minutes.

Preheat oven to 400 degrees.

Bake for 10 minutes while stirring occasionally, or until shrimp is cooked all the way through.

Slice jalapeño into thin slices. Slide onto toothpick.
Peel the mango and remove the pit.
Cut into squares and slide onto toothpick.
Slide shrimp onto toothpick and repeat the process.

Set them in a line on a platter and sprinkle or grind red pepper flakes on top.
