Spicy Cabbage Soup

1 medium sized onion, quartered and sliced thin
3 medium cloves garlic, chopped
2 tsp. minced fresh red chile pepper (serrano, or jalapeno)
1 Tbsp. dried mustard
5 cups plus 1 Tbsp. chicken or vegetable broth
2 Tbsp. fresh lemon juice
2 medium red potatoes, cut into 1/2-inch cubes
15 oz. can chopped tomatoes
3 cups of thinly sliced Savoy or green cabbage
salt and pepper, to taste
Instructions:
Heat 1 Tbsp. of the broth in a medium soup pot. Saute the sliced onion over medium heat for about 5 minutes, then stir in the garlic and minced serrano chile pepper. Continue to saute for another minute.
Stir in the dried coriander, mustard, and 5 cups of broth. Now add the rest of ingredients except the cabbage, salt and pepper. Simmer for about 20 minutes, uncovered, or until the potatoes are tender. Add the cabbage, and cook for another 5 minutes, then season to taste with salt and pepper.
