Spicy Black Bean Dip
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
Ingredients:
2 cups washed and cleaned black beans (dry)
6 cups water
1 small and 1 medium onion, chopped
2 Tbsp garlic, minced
2 Tbsp. salt
1 or 2 jalapeno chiles, minced
1 cup sour cream
1 tsp. cumin
Instructions:
To prepare the black beans, combine 2 cups washed/cleaned black beans, 6 cups water, 1 med chopped onion, 1 Tbsp. of minced garlic and 2 Tbsp. salt in a suitable pot, and bring to boil. Reduce the heat to low and simmer for 2-3 hours or until tender. Add more water if needed and skim any foam off the top.
Puree the beans in a blender and add the jalapeno chiles, the small chopped onion, 1 Tbsp. garlic, sour cream, 1 tsp. cumin and the salt and pepper to taste. Puree all the ingredients until smooth. Chill well before serving.
