Spice Thai Omlette

At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.

When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.

Ingredients

For the base:
2 tbsp pork mince
1 tsp finely chopped red chile
1 tsp minced ginger
1 clove minced garlic
1 tsp chopped shallot
1 tbsp sunflower oil
1 tsp butter

For the egg mix:
6 whole eggs
1/2 cup grated cheddar cheese
1 tbsp chopped spring onion
1 tsp salt

For the mayonnaise:
1 tbsp mayonnaise
1 tsp lime juice

For the last touches:
1 tbsp fresh coriander leaves
1 tsp chopped spring onion
1 tsp fresh lime juice

Instructions

Firstly you want to use a nice non-stick pan otherwise you will end up feeling like a failure when your pan fails you. Heat up some butter and oil in the pan and start frying the 1st group of ingredients to release their flavors. This first step should be done on medium heat until the shallots are slightly translucent. While these are ingredients are catching a bit of a tan throw together the mayonnaise .

As easy as it gets. Mix together the mayo and lemon juice and bang it straight on the plate.

Now that your base ingredients are cooked turn up the heat. Mix together the ingredients of the egg mix and pour them into the pan. Stir the lot together continuously until it’s half way cooked. Push the mix to the front side of the pan furthest away from you. This is just the curve of the pan . Let it cook for a minute and flip her over onto your plate.

To finish her off we going squeeze a bit of fresh lime juice over and add a bit of fresh coriander leaves and crushed black pepper. Enjoy and remember if you fail just try again. It’s worth the effort and once you can cook a proper omelette there’s nothing stopping you from moving on to something a bit more impressive.
