Southwestern Egg Casserole
An Anaheim pepper is a mild variety of chili pepper. The name “Anaheim” derives from Emilio Ortega, a farmer who brought the seeds to the Anaheim, California, area in the early 1900s.
Serves: 6-8
Ingredients:
10 eggs
½ cup flour
1 teaspoon baking powder
⅛ teaspoon salt
3 cups shredded Monterey Jack cheese
2 cups cottage cheese
½ cup butter, melted
2 Anaheim chiles, chopped
Instructions:
Beat eggs separately.
In a separate bowl combine the flour, baking powder and salt.
In another bowl combine:
Monterey Jack cheese, cottage cheese, butter, and chopped green chiles.
Mix everything together and pour into a 9×13 baking dish.
Bake in a preheated 350 degree oven for 35 to 40 minutes, till cooked through.
Let cool and set for a few minutes, then you’re ready to cut and serve with a salsa garnish!
