Southwest Chicken Soup

BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.

Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.

Ingredients

2 chicken breasts
1 onion, chopped
4 chicken bouillon cubes
5 cups water
3-4 Bellafina peppers, chopped
2 cloves minced garlic
1 tsp cumin
1 tsp chili powder
1 can diced tomatoes
1 can kidney beans
cilantro, limes, sour cream, tortilla chips for garnish

Instructions

Spray slow cooker with non-stick cooking spray. Add all ingredients to the slow cooker.
Allow to cook on low for 6-8 hours, or on high for 3-4 hours.
Remove chicken from slow cooker and shred. Return to slow cooker.
Serve soup with fresh cilantro, lime juice, sour cream, or tortilla chips.
