Sofrito Salsa

This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.

Serves: 8 servings

INGREDIENTS
2 medium sized tomatoes-scrape the seeds out of the tomatoes
4 cloves of garlic
1 red bell pepper, stemmed
Half of a white onion
1 Serrano pepper, stemmed
⅓ cup whole cilantro leaves, wash and pat dry before adding to food processor
Freshly squeezed lime juice from one medium sized lime
½ teaspoon salt
¼ teaspoon pepper

INSTRUCTIONS
Throw all of it into the food processor and pulse, stop before it gets too watery and is still chunky.
