Skip’s Habanero Salsa

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

1/2 cup cider vinegar
1/2 onion, minced
1 clove garlic, minced
1/2 carrot, grated
12 habaneros, cored
1 tsp. olive oil
1/3 cup chicken broth
1/4 cup tequila (gold)
1 tsp. leaf oregano
Lawrey’s seasoned salt
1/4 tsp. Worchestershire sauce
1/2 cup Honey

Instructions:
Saute the onions in olive oil until they start to turn golden. Midway through this process add the grated carrot. Add the minced garlic and stir for 1 minute to soften. Add the oregano at the same time and stir over moderate heat for about 1 minute. Add the habaneros and vinegar. Bring to a simmer, cover and cook about 10 minutes, or until the habs are soft. Remove from the heat and cool. Blend thoroughly and return to pot. Bring to a simmer and add the chicken broth, worchestershire and honey. Add salt to taste and add the tequila. Cook long enough to take away the raw alcohol flavor. Its pretty hot but the carrots and honey allow you to taste the flavor of the habs without scorching yourself. The chicken and tequila ensure its not too vinegary.
