Shrimp Etoufee
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.
Serves: 6 servings
Ingredients
¾ cup butter
6 tablespoons flour
1 cup chopped onion
6 chopped green onions
½ cup diced red Bellafina pepper
½ cup diced yellow Bellafina pepper
1 cup chopped celery
3 cups water
2 lbs peeled, deveined, chopped shrimp
3 tablespoons Cajun seasoning
½ teaspoon salt
½ teaspoon pepper
Hot sauce to taste
White or brown rice
Instructions
Melt butter in large skillet over medium heat, stir in flour.
Stir constantly until it becomes rich dark brown.
Add vegetables and cook until tender, about 5 minutes.
Stir in water and seasonings.
Simmer uncovered for 20 minutes or until starts to thicken.
Add in shrimp for another 5 minutes.
Serve over rice.
Notes
I would recommend serving with some crusty bread.
