Serrano-Mint Sauce

1 cup tightly packed mint leaves, plus additional for garnish (optional)
2 serrano chiles, coarsely chopped
4 cloves garlic, coarsely chopped
1″ piece of fresh ginger, peeled and coarsely chopped
2 tsp. granulated sugar
1/4 cup white wine vinegar
2 Tbsp. fish sauce
salt
Instructions:
Make the Serrano-Mint Sauce: place all of the ingredients, except the salt into a blender and pulse until smooth. Add salt to taste. Set sauce aside. This sauce is excellent served over fresh grilled seafood.
