Scrambled Egg and Chorizo Breakfast Tacos

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

INGREDIENTS:

Scrambled Eggs
1/2 bell pepper, thinly sliced
2 links smoked chorizo sausage, sliced
8 flour tortillas
Sliced avocado
Crumbled queso fresco cheese
Sliced jalapeno
Chopped cilantro
Hot sauce or salsa
Lime wedges

INSTRUCTIONS:
Make a batch of scrambled eggs, stir in the bell pepper and set aside.

In a medium skillet, sauté the sliced sausage over medium heat 2 to 3 minutes until browned.

Heat the tortillas and top with the eggs, sausage, and desired toppings.
