Savory Peach and Jalapeño Mini Pies

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Ingredients

  • 5 Medium Peaches (Diced)
  • 1 Large Jalapeño Pepper
  •  2 Nine-Inch Pie Crusts
  • 1 Cup Sugar
  • 1/3 Cup Flour
  •  1/3 Cup Butter (Melted)
  • 1 Large Egg (Beaten)

Instructions

  • Preheat the oven to 375 degrees. Coat a muffin tin with cooking spray or use paper baking cups to prevent sticking.
  • In a medium bowl, combine flour, sugar, beaten egg and melted butter. Add diced peaches and finely chopped jalapeño pepper to bowl mixture. (If jalapeños are mild, supplement with 1/8 to 1/4 tsp. of cayenne pepper according to preference).
  • Roll and flatten out the pie crusts on a lightly floured surface. Cut 6 inch circles using a cookie cutter. (Combine left over pie crusts into a ball and roll out with a rolling pin to create more circles). Lightly press and form 6 inch pie circles in the muffin tin or paper baking cups.
  • Add 3 tablespoons of peach and jalapeño mixture into each mini pie.
  • Optional: Roll out the other pie crust and smooth them out using a rolling pin. Using a sharp knife, cut out hearts and strips to cover the pies. Top the pies with the crusts. Bake 20 -30 minutes, depending on oven variation.
