Salsa Ranchera
Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat.
Ingredients:
4 large tomatoes, seeded and chopped
1/2 cup fresh cilantro, chopped
1 medium white onion, quartered
4 jalapeño chiles, stemmed, seeded and chopped
3 cloves garlic
1/2 tsp. Mexican oregano
1 tsp. pasilla or New Mexico chile powder
1 tsp. salt
1 tsp. white pepper
1 Tbsp. olive oil
1 cup water
Instructions:
1. Place all the ingredients, except the oil, into a blender and puree to a smooth consistency. Add the water gradually until you have a nice saucy texture.
2. Place the oil into a large preheated saucepan over medium high heat, and pour the mixture into the pan. Bring to a low boil and stir for 2 minutes. Reduce the heat to low and cover. Cook for another 15 minutes, stirring occasionally. This salsa can be made ahead of time and kept refrigerated. Serve warm over stuffed peppers.
