Russian Cutlets
At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.
When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.
INGREDIENTS:
Ground chicken meat- 700 gm
Ground beef meat- 700 gm
Raw potatoes- 3
Onion-1 large
Garlic cloves- 5-6
Egg- 1
Fresh dill herbs( chopped)- 4 tbsp
Fresh red chile- 1 ( chopped)
Any Meat seasonings- To Taste
Salt- To Taste
White pepper – 1 tbsp
Bay leaves- 3
Bread Crumbs- 200-300 gm ( or all purpose flour)
Canola Oil-250 ml
INSTRUCTIONS:
Peel the potatoes and dice them.
Cut chicken fillet and beef into small pieces.
Process all the ingredients( potatoes, onion, garlic cloves, chicken meat and beef meat) in your meat grinder.
Add seasonings, salt, white/black pepper , lightly beaten egg, fresh dill herbs and chopped red chili. Combine well.
Form small cutlets ( patties). Take a medium bowl, fill with bread crumbs. Coat the cutlets in bread crumbs/flour.
Heat some oil in a large pan, transfer the cutlets in hot oil and fry until golden brown. Repeat the procedure with the remaining cutlets.
Take a large saucepan that will accommodate all the cutlets. Place them into this saucepan, add 1 cup of water and bay leaves, cover and cook on slow heat 15-20 minutes.
