Runaway Bay Jamaican Chicken
This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.
It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.
Ingredients:
1 large red onion
3 cloves garlic
1 habanero pepper, seeded
1 Tbsp. fresh ginger root
1/4 cup olive oil
1/4 cup brown sugar
3 Tbsp. red wine vinegar
3 Tbsp. orange juice concentrate, thawed
1 tsp. soy sauce
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1/2 cup chopped cilantro
1/2 tsp. salt and pepper to taste
6 skinless, boneless chicken breast halves
Instructions:
In a food processor, combine the onion, garlic, habanero pepper and ginger. Pulse until all the ingredients are minced. Blend in the olive oil, brown sugar, vinegar, orange juice concentrate, soy sauce, cinnamon, nutmeg, cloves, cilantro, salt and pepper. In a container, combine the marinade with the chicken and cover. Refrigerate the marinated chicken overnight.
Preheat an outdoor grill for medium heat and lightly oil the grate. Grill the chicken pieces for 10 minutes on each side, or until the meat is no longer pink and the juices inside run clear. The chicken should be served with black beans and rice.
