Roasted Chile Mango Guacamole
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients
2 ripe avocado
1 onion finely chopped
1 large hand of cilantro coarsely chopped
1 large Mango
1 hot chile
1-2 tomatoes, diced
1 Tbs olive oil extra virgin oil
1 Tbs apple cider vinegar
2 Tbs Lemon juice
salt, pepper to taste
1-2 cloves garlic, optional
Instructions
Finely chop the chile and roast for a couple of minutes in a saucepan until they start browning slightly.
Dice the mango and tomatoes. Simply mash the avocados in a bowl with a fork, add the chopped cilantro and all the other ingredients. Chill in the refrigerator until served with bread.
