Refreshing Tamarind Juice

Yields 8 Cups
Ingredients
- Tamarind pods, 5 pounds or 8 pods, similar to quantity shown in the post
- Water about 8 cups
- Sugar
Instructions
- Obtain tamarind pods. 5 pounds, or 8 pods, similar to quantity shown in the post.
- Peel the hard shells. Peel the vein, or fibers off the pulp.
- Soak the pulp in 2 cups of hot water for 1 hour.
- Use your handy South Sudanese lofrega to stir the pulp, and gently mash the pulp to encourage the pulp to dissolve in water.
- Sieve the pulp into a jug, and discard the remaining seeds and fibers.
- Add additional water (6 cups) to the pulp.
- Add sugar to your desired sweetness.
- Add ice or chill in refrigerator, and serve.
