Red Pepper Ketchup
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina™ peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Ingredients:
- 4-6 Bellafina peppers (cored and coarsely chopped)
- 2 garlic cloves (peeled and sliced)
- 2 tbsp sugar
- 1 star anise
- 1 Tsp tomato paste
- lime juice
- salt
Optional
- 1 red chile pepper (freshly chopped)
Note
The pepper-ketchup, tightly closed, keeps fresh in the refrigerator at least for one week.
Directions
| Add the pepper pieces with the garlic slices, the sugar, star anise and chili pepper in a saucepan and cover them with water. Bring to boil and then simmer covered on low heat for 1 hour. | ||
| Remove the star anise. Then, with a slotted spoon, take the peppers, chilli and garlic out of the water and mash them together with the tomato paste. Add some sud until a ketchup-like consistency is achieved. | ||
| Season the pepper ketchup with a few drops of lime juice and salt.
