Red Pepper and Chili Jam

JalapeƱos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. JalapeƱos have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Ingredients
2 1/2 cups finely diced red peppers
1 cup finely chopped red onion
1 cup finely chopped tomatoes (skin on)
1 cup white wine vinegar
1/2 cup white sugar
1/2 cup brown sugar
1 jalepeno finely chopped
1 tsp red chilli flakes
1/2 tsp salt

Instructions
Put all the ingredients into a large wide mouthed saucepan or large pot and bring to the boil with the lid off.
Allow it to simmer for about 35 – 45 minutes (depending on the size of the pan) and until it has thickened and formed a jammy consistency.
