Quick and Easy Chile Chicken
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Serves: 2
Ingredients:
Chicken,boneless pieces – 250 gms/8 oz.
Ginger,finely chopped- 1 tsp
Garlic,finely chopped- 2 tsp
Spring onion, whites – 1 tbsp
Onion, diced – 1/2 cup
Green chile, chopped – 1 or 2( according to taste)
Dried red chili flakes – 1/8 tsp
Kashmiri chili powder – 1/2 tsp
Capsicum, cubed – 1/2 cup
Soya sauce – 1 and 1/2 tsp
Tomato sauce – 1 tbsp
Vinegar – 1/8 tsp
Water – as required
Sugar- 1/4 tsp
Cornflour – 1 tsp
Spring onion,greens- 1 tbsp
Salt- to taste
Oil -as required
For Marination:
Cornflour – 1 tbsp
Ginger garlic paste – 1/2 tsp
Soya sauce- 1 tsp
Vinegar – 1/2 tsp
Black pepper powder- 1/2 tsp
Salt – to taste
Instructions:
In a bowl,combine together all the ingredients listed under ‘for marination’.Rub this onto to the chicken pieces and keep aside for about 15 to 20 minutes. Deep fry the chicken pieces until golden brown and tender.Drain and keep aside.(You can also bake the chicken pieces as I did.For baking, preheat oven to 180 deg C, place the chicken pieces onto a greased baking tray without overlapping and bake for about 15 to 18 minutes turning once in between.)
Heat oil in a pan.Add ginger and garlic,saute for few seconds. Next add the spring onion and green chile. Saute for few seconds.
Add onion and cook for few minutes or until slightly soft. Next add the dried chili flakes and mix well.
Now add kashmiri chili powder and capsicum .Saute for 1 or 2 minutes.
In a bowl combine together soya sauce,tomato sauce and vinegar.
Add this sauce mixture and sugar to the pan and mix well .
Next add the cooked chicken pieces ,and salt to taste.Mix well until the sauce coats the chicken pieces.
Mix cornflour with 1/4 cup water and add to the chicken.Mix well and cook until the sauce coats the chicken pieces.Garnish with spring onion greens and serve with fried rice or noodles.
NOTES
You may serve this along with Easy Vegetable fried rice ,Mushroom Fried rice , Schezwan Fried rice ,Vegetable fried rice ,Vegetable Hakka noodles
Adjust the quantity of green chiles according to your taste.
