Quesadilla Hombre Loco
At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs. When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.

Ingredients
For the salad:
1 large over-ripe tomato
1 ripe avocado
1 tbsp chopped spring onion
1 tbsp chopped coriander leaves
1 tsp chopped red onion
1 clove crushed garlic
1 tsp fresh red chile chopped(as hot as you like)
1 tbsp lime juice
1 tbsp olive oil
For the quesadilla:
2 corn tortillas (store bought)
1 chicken gun (thigh and leg attached)
2 cups water/chicken stock/beer or whatever liquid takes your fancy
1 clove garlic crushed
1/2 onion chopped
1/2 cup BBQ sauce(store bought for now but my homemade recipe will follow in due course)
1/2 cup grated cheddar cheese
pinch of salt and pepper
Instructions
For the salad:
Simples. Mix it all together to taste and bang it in a bowl with love.
for the quesadilla
Firstly put all the ingredients apart from the corn tortillas and cheese into a pot and onto a low heat stove.
Simmer it really slowly for 40 minutes until the chicken is tender and cooked.
Remove the chicken and reduce the liquid down until it resembles a heinz ketchup type consistency. Remove the chicken from the bone, chop it up a bit and mix it with the sauce.
Add your cheese and put a nice 1cm high layer between the two tortillas.
Heat a bit of oil in a pan and fry on low temperature 2 minutes both sides until golden brown.
All that remains is to dig in and get messy. Enjoy!
