Pineapple Pepper Dip
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.
INGREDIENTS
1 cup chopped assorted Bellafina pepppers (green, red and/or yellow)
1 cup sour cream
1 (8-ounce) package cream cheese, softened
1 (8-ounce) can crushed pineapple, well drained
1/8 teaspoon salt
2 tablespoons coarsely chopped fresh cilantro or parsley
2 tablespoons chopped green onion
2 teaspoons finely chopped seeded jalapeno pepper
1 teaspoon freshly grated lime zest
1 teaspoon lime juice
Fresh vegetable sticks (pepper, celery, carrot, cucumber, etc.)
Tortilla chips
DIRECTIONS
Combine all ingredients in bowl except vegetable sticks and tortilla chips. Beat at medium speed, scraping bowl often, until well mixed. Cover; refrigerate at least 1 hour.
Serve with fresh vegetable sticks or tortilla chips.
