Pebre (Chilean Pepper Sauce)
Finger Hot is the commercial name for this asian-type pepper that is actually very similar to fresh cayenne and can be used in any recipe to add heat without changing the flavor. It is a good chile to chop and use in stir fry.
They are thin-walled and measure about 1/2″ wide and 5″ to 8″ long. These chiles also dry very nicely.
Ingredients:
1 head garlic, peeled
6 finger hot chiles, stemmed and chopped
1 bunch cilantro
2 Tbsp. olive oil
1/2 tsp. ground cumin
salt to taste
4 roma tomatoes, roasted, peeled and finely chopped
Instructions:
Grind the garlic and the chiles using a mortar and pestle, or in a food processor until they form a paste. Combine the cilantro and tomatoes with the chile paste. Mix in the oil, cumin and salt and let sit for an hour to blend the flavors.
