Peach and Pineapple Salsa

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Serves: Serves 3-4

INGREDIENTS
1 ripe peach diced
¼ of a small pineapple, skin removed, chopped into small chunks
1 jalapeno, sliced finely
10 vine-ripened cherry tomatoes, cut into quarters
Small bunch coriander (cilantro), roughly torn
Juice of 1 lime
½ tsp. salt

INSTRUCTIONS
Place all of the ingredient into a small bowl. Mix together and serve.

NOTES
You can make the salsa a couple of hours in advance, just mix everything together – except the coriander – then cover and refrigerate. Mix the coriander in just before serving.
