Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat.
1 large ripe papaya, peeled, seeded and diced
3 jalapeños, stemmed, seeded and minced
1/4 cup minced red onion
1/4 cup chopped cilantro
2 Tbsp. lime juice
1/2 tsp. grated lime zest
Combine all the ingredients in a bowl and toss thoroughly. This salsa is excellent with grilled chicken, fish, or sausages.
