Original Jamaican Jerk Chicken
This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.
It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.
Ingredients:
3 1/2 lbs chicken (3 lb of chicken breasts may be used if preferred)
6 sliced scotch bonnet (habanero) peppers (may substitute with jalapeno peppers)
2 Tbsp thyme
2 Tbsp ground allspice
8 garlic cloves, finely chopped
3 medium onions, finely chopped
2 Tbsp sugar
2 Tbsp salt
2 tsp ground black pepper
1/2 cup olive oil
1/2 cup soy sauce
juice of 1 lime
1 cup orange juice
1 cup white vinegar
1-2 tsp of the following, to taste:
ground cinnamon
nutmeg
ginger
Instructions:
Chop the onions, garlic, and peppers. Blend all of the ingredients (excluding the chicken) in a blender to make the jerk sauce.
Cut the chicken up into 4 pieces. Rub the sauce into the meat, saving some for basting. Leave the chicken in the refrigerator to marinate overnight.
Grill the meat slowly until cooked, turning regularly. Baste with the remaining marinade while cooking. Chop each quarter chicken portion into 5 or 6 smaller pieces.
Serves 4.
