Orange Shrimp Noodle Salad
At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs. When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.
Dressing
100 ml/ 1/2 cup fresh orange juice
100 ml/ 1/2 cup prawn stock
1/2 teaspoon freshly grated ginger
1 garlic clove, chopped
1 chile pepper, finely chopped
1-2 tablespoon honey
2 tablespoon finely chopped cilantro
1 teaspoon toasted sesame oil
Salt & pepper
Noodle Salad
150 g/5 oz medium-sized shrimp, shelled and deveined
200 g/7 oz soba noodles or pasta
2 scallions, finely chopped

Direction
Mix all the dressing ingredients in a medium saucepan until well combined. Cook the dressing mixture over a medium heat until the sauce is thickened or reduce in half. Transfer half of the sauce into another bowl, and let it cool.
Marinate the shrimp with half of the dressing sauce in refrigerator for about 20-30 minutes.
Cook the noodles or pasta according to the package instruction. Drain the noodles and rinse it with cold water. Toss them with salad dressing.
Preheat grill over medium heat, lightly brushes it with cooking oil. Grill the shrimps over medium heat for about 2-3 minutes on each side, or until opaque.
Mix shrimp with noodle salad, sprinkle with chopped scallion and cilantro.
