Yield: 4
Ingredients:
1 tablespoon cooking oil
3 garlic cloves
1/4 teaspoon crushed red pepper flakes
1 – 1 1/4 pounds pork tenderloin, thinly sliced
1 small head broccoli, cut into small florets (about 2 1/2 cups)
2-3 red Bellafina peppers, thinly sliced
1 carrot, thinly sliced
For the sauce:
1/2 cup orange juice
1/4 cup soy sauce
1/4 cup chicken broth
1 teaspoon sesame oil
1 teaspoon orange zest
2 tablespoons cornstarch
Directions:
In a large skillet or wok, heat oil to medium-high. Add garlic and crushed red pepper flakes. Saute until fragrant, about 1 minute. Add pork and continue cooking, stirring frequently, until pork is no longer pink, about 5 minutes.
Add vegetables to pan. Continue cooking for another 5 minutes, stirring frequently.
In a small bowl, whisk together the sauce ingredients. Pour sauce into pan immediately to prevent clumping, and continue cooking until vegetables are tender but still crisp.
