Noori Methi Paneer

At first glance these eye-catching chile peppers look like red jalapeno. However, they have a different flavor and are less meaty than Jalapeno. Red Fresnos are great roasted and added to salsas. Try grilling them alongside your steaks or in kabobs.

When roasting these they should char, blister, and become soft. Try substituting these in your favorite chile recipes.

Serves: 4

INGREDIENTS
200gm/7 oz. Paneer, cut in to cubes
200gm/7 oz. Onions, paste
25gm/5 tsp Ginger, paste
20gm/4 tsp Garlic, paste
20gm/4 tsp Tomato paste/ concentrate
15gm/1 TBSP Coconut oil
25gm/5 tsp Coconut, dry, grated
100ml whole Milk
400ml Water
4 Red chiles, dry, whole
6 Cloves
3 Cardamom
2″ Cinnamon stick
A pinch of grated Nutmeg
½tsp Kasuri methi
2 Bay leaves
½tsp Turmeric powder
½tsp Coriander powder
½tsp Cumin powder
½tsp Garam masala powder
Salt to taste
Pepper to taste

METHOD
Heat the coconut oil in a heavy-bottomed pan on medium heat.
Meanwhile, bash up the cloves, cardamom, cinnamon and red chiles with a mortar and pestle.
Add the above spices in to the oil along with the grated nutmeg and dried, grated, coconut. Wait till it becomes fragrant. About 30 seconds.
Add the onion paste. Sautée till it becomes golden.
Add the ginger and garlic paste. Add the bay leaves. Allow to cook on low heat for 2 minutes.
Add the tomato paste. Cook for a further minute.
Add the powder spices apart from the garam masala. Give it a minute or so.
Add the whole milk, water and the garam masala. Simmer for fifteen minutes on low heat till the gravy releases some oil. Season to taste.
Add the cubed paneer. Allow it to gently cook for three to four minutes.
Sprinkle over the kasuri methi and serve hot accompanied with rice or roti.

NOTES
Paneer is not interchangeable with farmer’s cheese. It doesn’t melt and retains it’s shape.

If Kasuri methi cannot be sourced use a combination of fennel seeds bashed with celery salt. Season with this mixture.

Make it Vegan: Use equal quantity of firm Tofu instead of paneer. Omit the whole milk and substitute with coconut milk.
