1 Tbsp. olive oil
8 oz. mushrooms, sliced
1/2 tsp. salt
3 New Mexican chiles, chopped
1 tsp. pepper
1/2 tsp. cumin
1 clove garlic
1-1/2 Tbsp. olive oil
Instructions:
Saute the mushrooms and salt in 1 Tbsp. of olive oil for about 10 minutes. Remove the seeds from the chiles, then soak them in hot water for about 15 minutes until they soften.
In a blender add the chiles, garlic and additional spices. Blend until the mixture is smooth. Using the remaining oil, saute this mixture for 5 minutes until it starts to reduce. Put the mushrooms on plate and top with the sauce.
Yields 6 servings.
