Mushroom and Black Bean Burger
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.
Ingredients:
3 Portobello mushrooms, wiped clean
1 cup canned black beans, drained and rough chopped
¼ cup finely chopped green chiles
½ cup finely chopped green onions
½ cup finely chopped cilantro
2 tsp. chili powder
1 tsp. each salt, pepper and onion powder
¾ cup breadcrumbs
1 egg, lightly beaten
Instructions:
In a food processor, chop mushrooms into extra fine pieces.
Transfer to a medium mixing bowl.
Add remaining ingredients and stir thoroughly to combine.
Liberally coat a large nonstick pan with cooking spray.
Form into patties, and gently place onto pan.
Cook over medium heat 5 to 6 minutes per side, until thoroughly heated with a slightly crispy exterior.
Serve on a bun with your favorite burger toppings, such as tomato, sliced onion, or guacamole.
