Monterrey Tex-Mex Queso Dip
Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.
The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).
Ingredients:
1 pound Velveeta cheese
1 pound Kroger Nice & Cheesy (or other store brand )
1/2 medium onion, finely chopped
1-3 fresh jalapeno chiles
1 Tbsp. butter
Instructions:
In large saucepan, saute the jalapenos and onions with butter over medium heat until the onions become translucent. Add both of the cheeses to the saucepan and blend with the chiles and onions(both types are really needed for the desired flavor). You may wish to cube these for faster and easier melting. Heat until all the cheese has melted. Stir frequently to avoid burning the mixture. Heat thoroughly and serve.
This dip is great with your favorite tortilla chips or use as a fondue. This can be reheated and used again by adding just a little milk.
