Monterey Chicken II

Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.

Ingredients:

1/4 cup flour
1 (1 1/40oz) package taco seasoning mix
4 skinned chicken breasts
1/4 cup (1/2 stick) butter
1 cup crushed tortilla chips

For cheese sauce:
2 Tbsp chopped onion
1 Tbsp vegetable oil
2 Tbsp flour
1/4 tsp salt
1 (13-oz) can evaporated milk
1/4 tsp Bailey Farms hot pepper sauce
1 cup (4 oz) grated Monterey Jack cheese
1/4 cup sliced olives
1 tsp lemon juice
Shredded lettuce

Instructions:

Cook onion in oil until tender but not brown. Stir in flour and salt. Add milk and hot pepper sauce. Heat, stirring constantly, until bubbly. Cook an additional 1-2 minutes. Stir in cheese, olives, and lemon juice. Cook until cheese melts. Serve chicken on shredded lettuce, and pour cheese sauce over top.
