Mojo Verde Sauce

JalapeƱos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. JalapeƱos have a balanced combination of flavor and heat.

2 bunches cilantro, stems removed
1 large garlc clove, coarsely chopped
2 jalapeno chiles, stemmed and coarsely chopped
1-1/2 tsp. salt
2 Tbsp. plus 1/4 cup extra virgin olive oil
2 Tbsp. cumin seed, toasted and ground
juice of 1 lime

Toss the cilantro leaves, garlic and chopped jalapenos in a medium bowl with 1/2 tsp. of the salt and 2 Tbsp. of the oil, then let the ingredients stand for about 20 minutes.

Place the mixture in a food processor and process into a paste. While the machine is still running, add the remaining 3/4 cup of oil, then mix in the cumin and lime juice. Taste and adjust the seasoning as desired.
