Mini Penne with Sweet Peppers and Cheese

BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.

Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.

Ingredients

Original recipe makes 6 servings
  • 1 (12 ounce) box Barilla White Fiber Mini Penne
  • 4 tablespoons extra virgin olive oil
  • 1 yellow onion, chopped
  • 6-8 Bellafina peppers
  • 1 cup vegetarian broth
  • 6 leaves fresh basil, finely chopped
  • 1/2 cup grated Parmigiano-Reggiano cheese grated Parmigiano-Reggiano cheese
  • Salt and pepper to taste

Directions

  1. Bring a large pot of water to boil; season water with salt to taste (optional).
  2. In a large skillet, gently saute chopped onions in olive oil for five minutes over medium heat.
  3. Meanwhile dice the peppers, add to the skillet and saute for three minutes over medium heat. Season with salt, pepper and add the broth. Keep cooking until sauce is reduced.
  4. Meanwhile cook pasta according to package directions, drain and toss with the sauce.
  5. Stir in chopped basil and cheese before serving.
