Mike’s Really Hot Habanero and Elderberry Wings
This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.
It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.
Ingredients:
2 1/4 lb chicken wings
1/2 cup elderberry juice, using about 7 oz elderberries (can substitute unsweetened juice)
1/2 cup habanero juice (using an approximately 7 oz habanero pepper)
1/4 oz soy sauce
1/4 oz olive oil
Instructions:
Remove the stems from the habaneros and use a juice maker to make fresh habanero juice. Also make the elderberry juice by juicing the berries.
Mix all the ingredients and cover the wings with the marinade for 6-12 hours. Grill the wings until the skin gets crispy but not burnt.
Serves 1.
