Mexican Burgers

JalapeƱos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. JalapeƱos have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Ingredients

12 ounces ground beef – 16 ounces if you’re really hungry! (80% or 85% lean is best for this)
2 tablespoons taco seasoning (try this homemade taco seasoning mix)
1/4 cup crushed tortilla chips
1 egg, beaten
1 roasted jalapeno pepper, chopped
1 small onion, chopped
3 cloves garlic, chopped
1 teaspoon olive oil
2 large slices cheddar cheese
1 roasted jalapeno pepper, sliced into rings – for serving

Cooking Directions

To a mixing bowl, add ground beef, taco seasoning, crushed tortillas, egg and chopped roasted jalapeno pepper.
Heat a pan to medium heat. Add olive oil and heat.
Add onion and cook about 5 minutes.
Add garlic and cook 1 minute, stirring, until fragrant.
Remove from heat and add onion and garlic to the mixing bowl.
Hand mix everything in the mixing bowl but do not over-mix or it will become mushy. Form into two large patties.
Cook the burgers in the heated pan about 5 minutes per side, or until cooked to your desired doneness. The time will depends on the thickness of your burgers.
Top with cheese and cover a minute, until cheese melts.
Top with guacamole, if desired, and sliced roasted jalapeno peppers.
Serve!
