Mango and Papaya Chutney
De Arbol (Capsicum Annuum) means tree like in Spanish. The plant has thick, upright, woody stems and the chile itself is narrow, curved and bright red in color. Believed to be closely related to the pequin, the De Arbol is thin fleshed, with tannic, smoky, grassy flavor and searing heat. This chile has a heat range of 7.5 on the heat scale of 1-10. De Arbol Chiles are comparable to a Cayenne Pepper. Scoville heat units 15,000 to 30,000.

INGREDIENTS
150gm Mango, semi-ripe, skin-on, cubed after de-seeding
80gm Papaya, ripe, peeled, de-seeded, cubed
50gm dried, mixed Berries, unsweetened
3gm Ginger chopped, yield from 2″ stem
75gm granulated, white Sugar
200ml Malt vinegar
100ml Water
3 dried red chiles, chopped roughly, with seed
1gm smoked paprika
3gm Kasundi
2 Cardamom pods
3 Cloves
1 Star Anise flower
1″ Stick of cinnamon
METHOD
In a heavy bottomed sauce pan heat the water and the malt vinegar.
Once it begins to simmer, add in all the ingredients except the sugar and the chiles. Bring this to a boil.
Now, turn down the heat, add the sugar and the chillies and stir thoroughly with a spatula to ensure that the bottom doesn’t catch.
Cook until the papaya appear gloopy. The syrup would appear sticky and the mango will yield to the pressure of a fork. The fruit will retain their shape but would have softened a lot. This should take about 15 minutes on a low heat, with the lid on.
Take off the heat and allow it to cool down before serving.
NOTES
Chiles can be substituted with sweet/ smoked paprika as per taste if so desired.
Kasundi can be substituted with equal quantities of whole grain mustard.

Store in an air-tight jar in the refrigerator for up to 2 months.
