Macaroni and Cheese Stuffed Jalapeno Peppers Wrapped in Bacon
JalapeƱos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. JalapeƱos have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.
Ingredients:
8 oz of pasta cooked according to the package directions
2 tbs of flour
2 tbs of butter
1 1/2 cups of milk
1 cup of extra sharp cheddar cheese (I used Cabot)
dash of freshly ground nutmeg
1/2 tsp salt
1 tsp minced garlic
12 large jalapeno peppers
1/2 cup of cheddar cheese for topping
12 slices of bacon
Directions:
In a medium sauce pan, melt butter over medium heat, add in flour whisk until a paste forms. Slowly whisk in milk until it is smooth.
Bring to a boil.
Whisk in cheese, nutmeg, salt, and garlic.
Continue stirring until cheese sauce is smooth and thick.
Pour over cooked pasta and mix until incorporated.
Set aside.
Slice each pepper in half length wise and remove seeds and any white fleshy parts.
Place each pepper on a baking sheet. Stuff with macaroni and cheese. Top with shredded cheddar.
Cut each bacon piece in half and wrap each stuffed pepper in a half a slice of bacon.
Bake at 400 for about 15-20 minutes. Or until peppers are roasted and bacon is crisp.
