Lemon Pepper Fish Tacos
Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.
YIELDS 6-8 TACOS
Ingredients:

1 (8oz) package Bumble Bee SuperFresh® Tilapia wth Lemon, Pepper and Herbs
6-8 soft corn tortillas warmed
slaw
1 and 1/2 cups shredded red cabbage, about 1/4 of a small cabbage
2 tbsp chopped cilantro
1/3 cup thinly sliced sweet onion
1 chile pepper, seeded and sliced
1 tbsp fresh lemon juice
1/2 tbsp canola oil
salt and pepper to taste
toppings
Pico de gallo, optional
sour cream, optional
chopped cilantro, optional
Instructions:
Cook the fish according to the package directions.
Meanwhile, make the slaw. Add the cabbage, onion, chile pepper, and cilantro to a medium bowl. Pour the lemon juice and oil over the top. Season with salt and pepper. Toss to evenly coat.
Break the cooked fish into bite-sized pieces. Fill each tortilla shell with fish and slaw. Add the toppings if desired.
