Jumbo Spicy Mexican-Style Shrimp al Ajillo

Ingredients:
1 pound U/15 shrimp
3 large garlic cloves, chopped
1 serrano chile, stemmed, seeded and coarsely chopped
juice of 3 limes
2 tsp. lime zest
1/2 cup chopped fresh cilantro leaves
4 oz. olive oil
1 anchovy fillet, chopped fine
Instructions:
Mix a tablespoon of the chopped garlic with 1/4 cup of the cilantro and some lime zest from the limes. Add 3 oz. of the olive oil and season to taste with salt and pepper.
In a large heavy skillet over medium heat, add the remaining olive oil and when the oil is hot, but not smoking, add the remaining minced garlic and the anchovy, then add the prepared shrimp and sear on one side until crispy. Turn the shrimp over and add the remaining lime juice and chopped cilantro. Serve the shrimp immediately with some soft warm corn tortillas and a bowl of hot bowl of black beans.
