Jim’s “Painkiller” Hot Sauce

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

1 Tbsp olive oil


3 cloves garlic minced


1/3 cup choppoed onion
1/4 cup chopped carrot


2 roma (plum) tomatoes, chopped

2 jalapeno peppers, chopped

2 habanero peppers, chopped

1/2 cup fresh oregano leaves


1/4 cup fresh parsley leaves

 


1 Tbsp salt


 

1 Tbsp ground black pepper


 

1/3 cup distilled white vinegar

Instructions:

Heat the oil in a saucepan over medium heat. Stir in the garlic, onion, and carrots. Cook and stir until the onion has softened and turned translucent and the carrot has softened, about 5 minutes. Scrape into a blender and add the habanero peppers, jalapeno peppers, tomatoes, oregano, parsley, salt, pepper, and vinegar. Blend until smooth and pour back into the saucepan.

Bring the sauce to a simmer over medium heat and cook 3 to 5 minutes. Set aside until cool,then pour into a bottle and refrigerate.

Serves 24.
