Jerk Pork with Pimento Season-Up

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

4 Habanero or 7 jalapeno chiles, stems and seeds removed, chopped
2 oz fresh pimento berries, or 1/4 cup powdered allspice
3 Tbsp lime juice
2 Tbsp chopped scallions
1 tsp ground cinnamon
1 tsp ground nutmeg
4 center-cut pork chops

Instructions:

Pound or puree all the ingredients, except the pork, to make a thick paste. Spread the past over the chops and marinate for one hour or longer.

Grill the chops over a hot charcoal fire until done. The seasonings will cause the chops to char on the outside, which is natural for this dish.

Variations: Substitute lamb chops, chicken, or rib steaks for the pork.
